The holidays are approaching. This may mean more business for you – or it may mean less. Either way, as caustic as it might sound, this is a great time of year to reconnect with past customers. These customers have already formed a relationship and had a (hopefully positive) experience with your store. It shouldn’t take as much effort to bring them back – just a reminder. So take advantage of the holidays to remind them of your business in a way that stands out from the crowd.

Every one of your customers should receive a holiday card this year. And a personalized one works the best. Of course, a personalized card takes more work. But that means it stands out from the signed, note-free cards that your competition is mailing out.

So how do you make sure your cards match up with your clients? The best way to do it is to work on the cards over the course of the year. If you sit down at the end of each month and write a brief note in each card, all you’ll have to do at the end of the year is stamp and mail them. For instance, if you client bought a mixer, you could say something to the effect of, “I hope you are loving your Kitchenaid mixer. Let us know if you are having any problems, or if there is anything else we can help you with.” If you worked personally with this customer, you can add in something from your conversation – how are those homemade cakes coming, you might ask, if an interest was expressed. Or you could have each salesperson write out a card at the end of the business day. Let them know that this will increase the chances that the customer will return and ask for them. If the cards are written while the memory is fresh, they will be more personal. Just make sure that you double check the files before you send it out; if the customer brought the mixer back, you would obviously need to change the message!

On the other hand, if you are just starting now, you might not want to sit down and spend the extra time combing through your customer database. You might calculate the postage and tell yourself it is not worth it. But if you sit down and compare it with your other advertising costs, you’ll find that the return is generally more than worth. (Granted, when the post office ups the price of stamps to , that may no longer be true…) Still, even calculating time, card cost, and postage, this is a fairly inexpensive method of advertising. And because you are contacting people who are already familiar, you will have a strong rate of return.

If you really want to up the return, include something with the items. A coupon is ideal, especially one that relates to past purchases. And free is always a great draw. If you have a customer who frequently visits in search of the Kitchenaid mixer, you could provide a discount on kitchen items, or even a coupon for a free (inexpensive) attachment with any purchase. A coupon only costs the paper it is printed on for customers who don’t utilize it, but those who come in for their discount or freebie will likely make another purchase – or they will remember your generosity and refer others. Still, if things are tight this year, include something like a business card (especially a magnetic one) to keep your name in the forefront of their minds.

If you think hard about your holiday cards this year, you can make yourself not only stand out, but also draw more folks in. And that would make for a very merry Christmas!

Quality ingredients and quality bakeware are probably the two most important elements in making a quality cookie. I’ve noticed a lot of bakers will purchase store brand ingredients like chocolate chips, coconut, oatmeal, raisins, butter and other important cookie ingredients. Think about what you are doing. What would you enjoy more, a cheap store brand chocolate bar or an expensive top brand chocolate bar?

Cheap ingredients make a boring cookie. Like everything else in life, you reap what you sow. Why waist your valuable time and energy baking cookies no one will like, not even yourself. You can taste the difference. Cheap tastes cheap and quality taste like quality. When you purchase brand x Oreo knockoff cookies, do they taste as good as the real thing? I don’t think so.

I’m not a cookie chef, but I’ve tasted a lot of really bad cookies in my lifetime. Usually given as a gift from a neighbor with good intentions. During the Thanksgiving and Christmas Holidays our house fills up with goodies from neighbors and friends. Most of the goodies are cookies. Generally 50% of the cookies we get are not fit for human consumption. Don’t get me wrong, I’m grateful for the thoughtful gift, but let me make a point. If you take the time to follow a tried and proven cookie recipe and use quality ingredients, how much more enjoyment will come out of your gift.

The quality of your baking supplies play a part, allthough quality ingredients play a big part in delicious cookies. A good quality cookie sheet will give you an evenly baked cookie, unless you didn’t follow the baking instructions. The best cookie sheets are the heavy commercial ½ sheets. Take all your thin cheap cookie sheets and give them a toss in the garbage. You will always have a struggle realizing a perfect cookie from one of those devices.

Some of other devices used in baking cookies may or may not have an effect on the outcome of your cookie. If your time and effort is of any value, quality appliances and accessories can play a big part in an enjoyable baking experience. I don’t want to name names, but KitchenAid by far has the best stand mixer. The 5 quart or 6 quart mixers make mixing ingredients a breeze. They also have a great array of attachments and accessories.

Using a small ice cream scoop to measure out your cookie dough will give you professional looking results. There are many sizes and makes of scoops on the market. Buy a couple of different sizes; you will probably find a use for all the sizes.

Finally, let use put what I’ve said to practice. Again, I may not be a professional chef, but I know my cookies. So if you will follow these simple rules and advise your next batch of cookies should be a success. In fact try this recipe, which by the way is my favorite, and see and taste the results for yourself.

Susie’s Chocolate Chip Cookie

1 3/4 cups butter1 3/4 cups brown sugar1 3/4 cups sugar3 eggs2 tsp. vanilla

Cream together thoroughly and then add:

3 cups old-fashioned oats3 1/4 cups flour2 tsp. salt1 1/2 tsp. soda1 cup chocolate chips1 cup pecan or walnuts1 cup coconut

To keep your cookie from spreading out too much place the cookie dough in the refrigerator of a couple of hours before baking. I like to make these cookies big. Scoop out by spoonful onto a cookie sheet sprayed with cooking spray. Preheat oven to 375°. Place the cookie sheet on the middle oven rack. Bake for 8 to 10 minutes or until golden brown. All ovens bake a little different so keep an eye on your cookies.

A pan rack is not required by the health department, but it should be near the top of your list of necessities. Used racks will work perfectly.

Storage Shelves – You’ll need lots of storage space for dry ingredients, packaging supplies, and other items. It’s always a great idea to make the most of your work space from floor to ceiling.

Hand Sink – A hand sink is generally a small sink used to wash your hands before and during work. This sink is usually required by the health department. You can save on cost by purchasing a fiberglass sink (called a utility sink) at most building supply stores.

Ingredient Bins – It’s not necessary to buy commercial storage bins for items like flour and sugar. Just go to a building supply store and purchase large thirty-two-gallon trash cans with lids. They must be new, of course. These cans will store a fifty-pound bag of flour or sugar and more. Do not empty the product directly into the trash can. Instead, drop the unopened bag into the can, and then open the top of the bag and dip out the product as needed.

More Tips: Before purchasing any large equipment, measure all doorways that the equipment has to pass through before it can be placed in the work area.

Always ask for a warranty. Most companies offer at least a thirty-day warranty on used equipment.
